My second potato recipe for my week living on £1 a day. I bought the potatoes from my local fruit and vegetable market on North End Road. For £1 I bought over a Kg of potatoes in a bowl and the lovely stall owner gave me a free cabbage and some carrots too! I have used 600 gms of potatoes which should be enough for 5 people.
Serves 5 people; Cooking time: 25 minutes
- 600 gms potatoes (any variety, the ordinary white ones work best)
- 1 teaspoon salt
- 1 teaspoon whole cumin seeds
- 3 whole dried red chillies
- 1 Tablespoon oil
Boil the potatoes and once they are cooked take them out of the water and let them cool. Take the skin off and roughly break the potatoes into chunks- I think they look nice and taste better this way but you can also cut it into cubes. In a frying pan or wok heat the oil on medium high heat. Add the dried red chilies, followed by the cumin seeds. Wait for a few seconds for the cumin seeds and chilies to infuse in the hot oil before adding the potatoes. Add the salt and mix gently. Turn the heat on low and stir the potato mixture in the pan for 3 to 4 minutes.
